Este establecimiento ofrece una experiencia auténtica en Raleigh. El Irregardless abrió en 1975 y se hizo famoso por su ambiente hippie y su comida vegetariana. En los años 80, fue el primer restaurante de Carolina del Norte donde estaba prohibido fumar. Hoy, el Cafe es el restaurante de Raleigh que más tiempo lleva abierto con el mismo propietario. El establecimiento ha cambiado mucho durante los años, pero sus valores siguen siendo los mismos. Sus galardonadas comidas caseras se elaboran con ingredientes locales y ecológicos. El Irregardless es un restaurante de alta cocina informal que sirve mariscos frescos, carnes, platos vegetarianos y veganos y alimentos sin gluten, todos respetuosos con el medio ambiente. Asimismo, ofrece una carta de vinos exclusivos y cervezas artesanales, espressos, capuchinos y 25 tipos de tés. También ofrece música en directo todas las noches, desde sesiones de jazz hasta bluegrass. Los grupos se anuncian en la página web. Los sábados por la noche actúan bandas más grandes y tocan música para bailar. El Irregardless Cafe es el lugar donde los amigos se reúnen para cenar.
