   My Birthday celebration, Food/Bev manager Rodrigo who I meet a taste of Vail made sure my night was extra special. Often checking in on us to make sure everything was perfect. Our server Shannon pays great attention to detail making sure we enjoyed everything. Unfortunately I did not write down our second server Aishia(?) Beautiful young lady who served us dessert our flaming dessert called Death Star, not to be missed. She had to light my sparkle candle while holding the flaming pot that goes over the dessert. She is just lovely. I have been to Makoto before always sitting at the counter to watch the perfection of your chef's. I have been to Matsuhisa in Vail and Denver many times. Just try Makoto for a change of pace. They have a free shuttle at the transportation center to take you to Grand Hyatt appox every 15 min and free parking.

   Today, my family (my brother and two kids) had the pleasure of enjoying a late lunch/apres ski at Makoto Vail. As a regular at Makoto Miami in Bal Harbour since its opening in 2011, I have always been impressed by the consistency and quality of Chef Makoto’s creations. I’ve even had the honor of dining with Chef Makoto at the bar on my birthday. Over the years, I’ve told him that his restaurants are among the best in the country -and possibly the world. However, I have to admit: my experience at Makoto Vail exceeded my expectations, even surpassing my regular experiences in Miami. Apologies to my Miami crowd, but it’s the truth! We were fortunate enough to be seated right when the restaurant opened at 3:15 PM local time. From the moment we arrived, the service was exceptional. Our server, MigMar, was not only kind and friendly but also incredibly knowledgeable about the menu, making our experience even more enjoyable. As for the food -wow! We started with the classic Makoto salad, dynamite hand rolls, and spicy edamame, all of which were perfect as usual. Then we ventured into some "common" dishes like truffle salmon, hamachi crispy rice, and tuna crispy rice. I can’t emphasize enough how these dishes were anything but ordinary. They were absolute standouts, delivering flavors far beyond what we had expected -truly a delightful surprise. Next came the wasabi fried rice, sea bass sablefish, and, of course, the kids’ favorite: the A5 wagyu strip on the rock. My kids love cooking their own meat, and Makoto made the experience so special for them. To top off the meal, we enjoyed Makoto’s signature house sake —which never disappoints- and finished with the refreshing mochi ice cream and, my personal favorite, the fruit toban taki. All in all, it was the perfect end to a ski day in Vail. The combination of impeccable service, outstanding food, and a wonderful atmosphere made Makoto Vail an unforgettable experience.
