Liam Dillon is chef and owner of award-winning, The Boat Inn, Staffordshire.
With previous experience in some of London’s and the world’s best kitchens, think Marcus Wareing at The Berkeley, Eleven Madison Park, Daniel, Gilt, and Tom Sellers, Story, Liam has returned to his hometown with the goal of raising the bar of Staffordshire's dining scene via the opening of his first solo venture, The Boat Inn, in 2017. Liam’s cooking is inspired by his travels in Australia where produce was king and has applied the simplicity of cooking with premium ingredients to the menu at The Boat Inn. The Boat Inn intends to open the palates of locals introducing different flavours and techniques, challenging us to think out of the box, and courting the attentions of a Michelin star.

    A fabulous lunch that wasn’t rushed and we even had coffees and further drinks in the garden afterwards. Shout out to a new waitress who had only been there a couple of weeks who was extra smiley and chatty. Thank you all!

    Just had an amazing evening at The Boat Inn. The food was fantastic and the service first class. Can’t wait to go again - and I’m really picky. A serious rival to Birmingham’s best restaurants.

    It was our first visit to The Boat but it won’t be our last. Due to Covid restrictions we were seated outside which was very pleasant and it was obvious that a lot of effort had gone into making this a pleasurable experience. A grazing menu was on offer and the quality and presentation of the food was exceptional. Staff were friendly and knowledgeable, informing us as to how things are made, e.g, Cold Brew Rhubarb - made on premises ..... Can’t wait to go back when the main restaurant is open and we can try the tasting menu.
