Die japanische Küche hat einen Großteil ihrer traditionellen Esskultur über die Jahrtausende hinweg beibehalten. Dabei ist die Esskultur der Japaner stark geprägt von der asiatischen Lebensphilosophie und den Traditionen des Insellebens. Wie in allen anderen asiatischen Ländern auch ist Reis das Grundnahrungsmittel. Der japanischen Küche entsprechend wird er weder scharf gewürzt, noch mit anderen Zutaten gemischt und behält so seinen Eigengeschmack. Aufgrund der geographischen Lage gehören zur guten japanischen Küche neben viel Fisch konventioneller Weise auch Meeresfrüchte. Anders als in den meisten asiatischen Ländern pflegen die Japaner ihre Gerichte nur wenig zu würzen, da sie besonderen Wert auf die natürlichen Aromen der Nahrungsmittel legen. Dies ist auch ein Grund, warum Japaner viele Gerichte – wie beispielsweise Sushi – kalt konsumieren. Da die japanische Küche durch frische Zutaten besticht, werden diese wie in vielen anderen Esskulturen auch der Saison angepasst.

    Das Ambiente und das Essen war ausgezeichnet. Die Weinauswahl könnte etwas größer sein, hat aber trotzdem gepasst. Die Preise sind für die Stuttgarter Innenstadt fair. Wir kommen auf jeden Fall wieder.
