  Noodles in a savory/sour fermented tofu and tomato broth with house made fish balls, prawns, cuttlefish, water spinach, white coral mushrooms, tofu puffs and fried garlic. One of the most common Thai street noodles. Choice of noodles.

  "Dry" wheat noodles with ground pork, pork balls, red pork, cracklings, peanuts, bean sprouts, long beans, preserved radish, fried, chili vinegar, fish sauce and chili powder, broth on side. Can be ordered "naam" (soup style). Choice of noodles.

  Thai brand MaMa instant ramen noodles in a house made pork bone broth doctored with tamarind, fish sauce and chilies, with pork balls, prawns, yu choy and a poached egg*. Homage to a Chiang Mai street side restaurant that has specialized in this dish for two decades, and to the Thai obsession with instant ramen noodles.

  (Available Vegetarian) Fresh local wide rice noodles, Carlton Farms pork, Chinese broccoli, egg and black soy sauce stir-fried in a smoking hot work. Cooking method studiously lifted from Yok Faa Pochana, a favorite Chiang Mai street Mai street side restaurant. Had to eat there about 50 times before trying to cook the dish but had it figured after the second or third visit. Simple is best!.

  Deep fried crispy fresh wide rice noodles or crispy wheat noodles topped with a "gravy" of pork, egg and phak khanaa stewed in yellow bean sauce and soy sauce. Home-style recipe from an old friend who makes this classic for her husband and four sons when they are hungry and missing their village in Thailand.
