"Hunkarbegendi" ("le sultan l'a aimé") a été servi à l'impératrice. Son ingrédient principal est l'aubergine rôtie sur le feu jusqu'à ce que sa peau soit brûlée, celle-ci est ensuite retirée et la pulpe mise en purée. La première mention écrite de ce plat remonte à l'an 1539, dans le cadre d'une fête somptueuse donnée par le sultan Süleyman le Magnifique. Kavun Dolma, Stuffed Melon with lamb, almonds, pine nuts, currant raisins and spices, is one of the refined dishes that would have been prepared only for the Sultan, his family, and special guests. The earliest written record of this dish dates back to a sumptuous celebration feast given by Sultan Suleiman the Magnifi- cent in 1539.

Made with fish or seafood the dish could be served to Christian priests during Lent, when they were forbidden by tradition from eating meat. Our Papaz Yahni is prepared with seafood and cooked in earthenware.
