   I recently dined last night with a couple to celebrate my wife's bday at República, and I cannot express enough how much I loved the experience! The restaurant truly embodies the farm-to-table concept, delivering fresh ingredients that elevate each dish to new heights. The presentation of the food was nothing short of artful, making each plate a feast for the eyes as well as the palate. Every bite was exquisite and packed with flavor, showcasing the chefs’ dedication to quality and creativity. I truly congratulate and appreciate Chef Giovanna Huyke in her vision and craft. This is a speakeasy-ISH gem in Guaynabo, hidden but accesible. Will be back, on a final note we feasted, sampled, and expected a $500.00 plus meal tab (with many drinks and a lot of food) and were amazed the price ranged as an affordable luxury that can be repeated, well done. The atmosphere was inviting and complemented the fantastic dining experience. I highly recommend República to anyone looking for a memorable meal. I can't wait to return!

   Delicious! Creative with familiar ingredients. The wagyu empanadillas and pollito frito were divine. The ceviche (and its sauce) as well as the red snapper with coconut sauce were super fresh and tasty. The rice was sooo good, sweet and salty. Beautiful venue and great service. Congrats to Chef Giovanna and her son Chef David.

   Excelente servicio. Un buen espacio para compartir entre amistades. El sabor de la comida es espectscular y su coctelería y carta de vinos también satisface.

   I went to eat Jovana cooking since know about her since high school. The restaurant is expensive , but don' care since will be the cooking of someone I rate as master . First , It was our surprise the waitress want to explain to us what is a "Peto" and tell us is a good fish from lakes. What She didn't know is that We eat that fish frequently. The last one was after fishing it in Cabo Rojo the weekend prior the restaurant visit. That fish is from sea water . After that I though, this don't look good. Second, Since the restaurant is expensive, my standards of review were higher. The cocktails were made as fast food drinks. 80% ice and 10% drink. That was in a cocktail that require small amount of ice. My friend asked for an Old Fashioned and the ice was bigger that require for the glass use . People use to drink those cocktails notice. Third, The food. Basically one was washed pull pork with pasta. The Peto was good ( I was expecting excellence). The third dish We didn't eat it . My worse visit to a restaurant prior this one was Gordon Ramsay in Miami. I recommend Bocaito in Vega Baja and Hoy como Ayer (Joyuda) to improve the menu . In San Juan Mario Pagan beat Republica

   Tuvimos una experiencia muy buena en el restaurante. El servicio fue excelente, la comida estuvo riquísima y el ambiente muy agradable. Todo el personal fue atento y cortés, lo que hizo que la velada fuera aún más placentera. La única recomendación sería mejorar la rotulación del estacionamiento, ya que no había ningún tipo de señalización que indicara dónde se encontraba, ni personal que nos dirigiera directamente al restaurante. Fuera de eso, todo estuvo excelente. Sin duda, volveríamos.

    Great overall experience, cocktails were creative, service exemplary and the food was incredible had a snaper in a corn sauce amaizing with a side salad and green rice omg. For dessert i had barriguitas de vieja unable to translate.love it!!!!!!
