Why they're an Icon

Executive chef: Chef/Owner John Carver

From the OpenTable editors: It can take months to get into Chef John Carver’s wildly popular Italian restaurant, where there’s a custom woodfired grill at the heart of the industrial space. But it’s worth the wait for fresh pasta and epic steaks, like the cappelletti “bishop’s hats” stuffed with spinach and sauced with brown butter, alongside a 50-day dry-aged porterhouse “la Fiorentina.” Don’t miss the charred veggies, like roasted vine tomatoes with creamy burrata, and wash it all down with a house negroni.

I was really excited to have finally gotten to experience Red Ash. Unfortunately, I didn’t know about or see the valet parking and got royally ripped off with $50 parking across the street. Note to potential diners, Red Ash actually does have valet service! The restaurant was incredibly loud and crowded, and very tight on space. There’s a lot of commotion and noise going on around you and although I would not come here again if I needed to actually hear what my dining companion is saying, the ruckus speaks to the success of the restaurant and quality of the food. The service was absolutely outstanding - fun, friendly, helpful with every aspect of the menu and the food arrives quickly. As for the food, for appetizers we had the beef carpaccio (small, but outstanding) and the buffalo mozzarella and tomato salad. We weren’t wild about the tomatoes (which were very mushy) or taste (it was a bit bland). For main dishes, we had the appetizer portion of the “Bishop’s Hat” pasta with brown sugar and sage - it was excellent. It’s a fairly common dish at Italian restaurants but this one was quite special. We also had the appetizer portion of the tagliatelle, which was quite big and it was excellent. They have a great wine menu as well. The prices were surprisingly fair for the quantity, uniqueness and quality of the dishes. Everyone there, from the front desk when you walk in to the service staff are terrific - they really welcome you. Overall, I will definitely go back for the food - the loud ambiance is clearly based on the sheer success of an outstanding menu. Austin finally has a world class Italian restaurant!

Thanks to Open Table's notify feature, we were able to snag a reservation and so glad we did. The food was outstanding and we were seated at the section overlooking the kitchen which was truly an added experience watching the staff work their tails off popping out stunning masterpieces one after the other. We had the bone marrow appy (honestly not my fave but that's a me problem, the bread was amazing I just can't with the texture). We then shared the blue crab pasta and the small filet, as well as the carrots and the prosciutto/corn risotto. Everything was incredible, with SO MUCH flavor. Service was also exceptional. We expected Italian and what we got was so much more. This is now in our top lineup for special occasions, and all the other seafood & steakhouses are off the list. It's just over the top great which is a rare find. Can't wait to come back!

We had a fantastic experience at Red Ash! Zack, our server, was friendly, polite, and made us feel welcome from the moment we sat down. The food was absolutely delicious—every dish was full of bold flavors and cooked to perfection. It’s easy to see why getting a reservation here is so tough; the place was packed with energy and clearly loved by many. We’ll definitely be back!

We dined here twice in our 4 day stay in Austin and both dinners were unbelievable! Honestly, it was probably one of the best meals we have ever had. All of the staff is very attentive and wants to make sure your experience is nothing short of amazing. I would come back to Austin solely to eat here!

Arrived 37 minutes earlier than my reservation time. The hostess’s were initially nice and expressed they would try to accommodate me sooner. The restaurant had various tables (7) that could seat 2-4 people available, (2-3) which seemed to be put together for a large party behind the hosts. There was only one couple ahead of our party of 2 and ironically not the usual wait outside of the restaurant, thus it was clearly just the other party and mine. Waited to be seated until 4 minutes from reservation time, yet various other smaller groups that arrived after were promptly seated as we waited , evident to be a hot spot where “you have to know someone” as whispered. Nevertheless, finally ordered. NICK is a phenomenal waiter and the assistant servers who aided last night were delightful. Graciously diffused the prior experience. The Octopus, Di Mare pasta & Tiramisu excellent! All Mocktails are divine as well, just need to be mindful that due to the congestion at the bar unintentional mistakes can be made without malice … so take a little sip vs gulp initially. It can be an intense surprise. Overall arrive at your scheduled time or minimally past it & make friends with the controllers lol

Ravioli special was extremely salty; meatball appetizer was nothing special. Marinara had no flavor. Clams, bread & endive salad were our favorites Service was good
