2018 Politics & Religion

Just like Politics and Religion, the two varietals in this blend are taboo in combination according to the French. But in Texas and at Hilmy, we think they go together beautifully. A fruity, dry, red wine, this vintage goes well with spicy foods such as Mexican, Indian, Cajun, BBQ and Korean. Can be aged from five to seven years when stored properly. 2016 The Temp

A fruit forward, dry red wine, with vibrant aromas of raspberry, vanilla and cinnamon, with hints of cedar and clove. The palate has a delightful mouthfeel with integrated tannin structure. Flavors of cherry and raspberry lead, followed by notes of cured meats and tomato. This fruit forward red is a great pairing for your favorite pizza. 2018 The Temp

This new 2018 The Temp is a wonderful blend of Tempranillo, Sangiovese and Barbera. The bouquet opens with spicy earth notes and subtle cocoa. The ruby color of the wine does not disappoint! 2016 Tempranillo

2014 Bishop Sangiovese

The 2014 Sangiovese is a full bodied wine made with 100% Sangiovese from Bishop Vineyards. Aged for 11 months in barrel before being bottled, this wine exudes ripe cherry notes with a hint of white pepper. While this wine is great right now, we predict this Sangiovese to age extremely well over at least the next 5 years. The Temp is a bright, fruit forward red wine that is ready to consume immediately. A shortened contact time with the skins coupled with brief aging in 100% new French oak, allowed us to make a very approachable 'table red' that pairs well with nearly any food you can throw at it. A beautiful medium-bodied red wine that has continued to improve year over year with age in the bottle. Primarily Tempranillo sourced from Meadow, TX in the High Plains AVA, complimented by Sangiovese from 'Bishop' vineyard in Childress, TX and just a hint of Merlot. Plum and blackberry on the nose, followed by hints of tobacco, orange zest, and cigar box scents. A balanced wine with flavors of blackberry and cherry, dovetailed with notes of leather, cinnamon, and sage. Pair with brisket, hearty pasta dishes, or an aged Manchego cheese.
