Hidden behind a door in the Lobby of Calgary’s Alt Hotel East Village, guests are welcomed to an exclusive 8-seat tasting counter. Chef Darren MacLean and his team craft dynamic, daily tasting menus that celebrate Canada's cultural mosaic.

The minimalist space, with a handcrafted 150-year-old Douglas fir bar top, and a stunning Italian marble cooking counter at its heart, invites guests into the heart of the culinary process, transforming dining into an interactive performance. Here, technique, storytelling, and flavour seamlessly collide.

Embark on a 15-course culinary journey celebrating meticulously sourced Canadian ingredients and the diverse cultures that shape Canada’s rich mosaic. Your evening begins in our newly renovated parlour, where you’re invited to enjoy a glass of bubbles or cocktails from 5:30 PM. At 6:30 PM, we transition to the dining room to commence the unforgettable experience. Please note, due to the nature of the tasting menu and its ever-changing ingredients we kindly decline all substitutions.

The experience at EIGHT was unlike any other dining experience i've ever had. The way that Darren and the team have carefully crafted the dishes with the best ingredients from around the country and tell a story with each dish was very intentional and well executed. I recommend EIGHT for anybody looking for a unique and special dining experience in the city and look forward to coming back

it was the greatest culinary experience I have ever been a part of.... the food was out of this world good, the service and ambiance was fantastic..... if you have a few hundred dollars spend and are lucky to get a reservation I highly recommend Eight!!!!!!!!
