   The food was excellent. Service was hectic and the restaurant seemed short staffed. Mixed drinks were not properly made, though we did not send them back. Would recommend getting wine.

   Good food, nice atmosphere, quaint. The service was not terrible but a little lacking. We never got offered water until we asked late in the meal. That would seem like a no-brainer to me. The sea bass was excellent as we had the surf and turf. It would be nice to have the sides listed on the menu. Also, we were not offered bread.

   The menu is not the most extensive and it is on the highest end of the spectrum for the city. The waitress suggested we order the Filet we wanted medium rare so we agreed. It was brought out medium well so the person had to watch everyone else eat while the dish was remade. Although they we apologetic all they did when they brought the check was to comp one beer. In my opinion, not enough to keep a customer.

   New management at Echo has kept a lot of the old personality and style. There have been a few deletions and additions to the menu but goofy, Seth touches like the “three soups” and “three salads” are still there. Chef still comes out to chat with the diners and does seem truly interested in making things right. Portions are (overly?) generous. Plating and presentation retains the busy Seth style with multiple garnishes on each plate. (Yes, there are probably some mashed potatoes hiding under there.) Chef has a heavy hand with the salt but it is a restaurant after all. We had a pleasant evening and I hope more changes are in the works for the menu—maybe from time to time adding one new dish and removing two old ones.

   A very pleasant surprise. One of our best meals in Knoxville without an exorbitant price. Very well prepared and delicious food and attentive service.

   This was the first time back since it was sold. Things have changed but not for the good. Crab cake appetizer was good. They loaded it with sauce. We got the trio of soups because the place was freezing. But our waiter almost forgot it and we reminded him. Service was slow and the place had a handful of tables filled on Saturday night. I would hate to see it busy. The meal was good steaks cooked perfect but way to much sauce on it. We ordered key lime pie to go and when we got home noticed it was burnt. 9.00 piece they let go out of their restaurant. Quality control needs to be addressed. I included a picture of it.
