Chapter One is an award winning restaurant based on Parnell square, in Dublin's north city centre. The head chef Ross Lewis sources his produce locally, and looks to keep his dishes seasonal. The influence behind the cooking derives from a few sources, including the seasons and the Irish landscape. Lewis wanted to ensure that the restaurant was Irish with an international feel. Chapter One has an array of menu offerings, from a cheese menu to a tasting menu. Ensuring they do not alienate the everyday diner they also serve a pre-theatre dinner menu alongside a lunch menu. Vegetarians have a dedicated menu if that is what they would enjoy.
