About this restaurant

For 400 years the Giovale family has been producing raw milk cheeses in the Alta Val di Susa pastures (on the border between Italy and France). A long history of cheesemakers handed down for generations, which together with the respect for the territory and the enhancement of artisanal production processes, guarantees a unique product of excellence. Our production includes cheeses of sheep's milk, cow's milk and goat's milk: fresh and matured cheeses, soft, semi-hard and hard, aged in mountain pastures and in the cellar, with different varieties of ageing. In the list of cheeses, in addition to our production, there are carefully selected products among the excellence of Piedmontese cheese production, Italian and French, which come from small producers who use techniques and methods of farming and agricultural production both natural and non-intensive.
