aurants receives protein shipments three to four times a week, all the meats are raised free range style with no antibiotics, hormones or any other unnatural farming practices involved, our seafood is mostly wild caught, but some rarer species can only be acquired through ocean farming. our protein list is updated daily, some proteins are exclusive or limited from start of dinner service, which means they can sell out at any given moment, and it could happen at the first or last table of the day, so play it safe & have a second back up choice in mind. add pan seared hudson valley farms foie gras grade a medallion to any dinner.
