   Service was great but server didn’t allow a taste of wine before serving because it was screw top. She over poured wine as well. I am a sommelier….

   Proof never disappoints! We were so glad to be back in Louisville for a weekend and had to dine at our favorite restaurant in town. The risotto was off the charts and of course the charred octopus is a must have. Such a cool space and the decor is so wonderful. If it’s a special occasion or just a night out Proof is the place. Grab a cocktail and stroll the museum while you are there, you will be glad you did.

   Pre-theatre dinner for hubs and I. We enjoyed the crudo (6 delicious slices which we shared), the Bibb salad (one each, quite robust with a pleasant green goddess dressing) and then we diverged, hubs to the steak special and me to swordfish which was cooked perfectly, tender and not dry! Finished out with house made sorbet with roasted strawberries and aged balsamic vinegar which balanced beautifully with the sweetness of the sorbet. We love Proof and it never lets us down.

   We had changed reservation times but ended up arriving earlier than originally set . Could be the reason we weren't visited by a waiter for 10 minutes. Our waiter turned out to be outstanding and very knowledgeable about drinks and food. The decor was eclectic and not conducive to a restful atmosphere. It was very loud but we could still converse. Pork chop was great as were the beets and bison burger. Swordfish and octopus were a bit overcooked. All in all it was a good experience

   Great options for even picky eaters. Grilled octopus starter was excellent. Rock shrimp and Swordfish were also good.

   Awesome food and environment. Bathrooms were a trip. Food was delicious. We went with a large enough party to basically order one of everything and it was all great. Can't go wrong with anything on the menu. Drinks menu is extensive from a wide selection of wine to bourbon and whatever else you want. Worth the reservation for sure. I'll be back every time I visit Louisville

   We celebrated our anniversary with a perfect dinner here! The service was exceptional as were cocktails and every eaten morsel. We had a salad, smoked chicken and lentil-walnut ‘bolognese’ spaghetti, followed by strawberry sorbet and devils food tiramisu. The decor is designed for visual and physical comfort. Highly recommended!
