Talking up St. Louis' wide-ranging Italian eatery scene, which gets as specific as regional specialties, he says he's wanted to have a place like this since he was 18."We're going to start very simple and accessible," he says, "we'll play to the crowd and start a dialogue, then grow the menu with community input.""Simple," includes dishes like his tomato bisque, with which only has five ingredients.
