Gregorio's, ubicado en el centro de Carlsbad, ofrece gastronomía italiana. Anteriormente conocido como Spirito's, ha estado sirviendo deliciosa comida italiana durante casi 25 años. Originalmente fue creado por una pareja de la Costa Este para compartir sus recetas familiares. Desde el principio ha contado con una clientela fiel y por eso los propietarios decidieron comprar el restaurante. Siempre han considerado que este lugar es "como sentirse en casa". En 2004, Gregorio's reemplazó el nombre original pero mantuvo las recetas familiares que fueron tan queridas por los comensales y ahora se han añadido algunas más, que se pueden acompañar con una amplia carta de vinos y un bar completo. El establecimiento es ideal para saborear la gastronomía italiana. Los comensales lo convertirán en su lugar preferido. Los objetivos del restaurante son simples.
