Thirty Bales is a celebration of everything Midwestern cuisine has to offer. We're an upbeat neighborhood restaurant bringing together bright personalities, bold recipes, clean ingredients and craft spirits and playing with the flavors that make the Midwest a place unlike any other. If you're curious about our name, it comes from the legend of Paul Bunyan and Babe the Blue Ox. As the story goes, Babe had an appetite as big as Bunyan himself and is rumored to have eaten 30 bales of hay a day.Like our restaurant's big blue spirit animal, we're a pack of people that lives to eat and drink. We're endlessly in love with the Midwest and its connection to seasonal ingredients grown close to home. It's what inspires our menu and our team. And it's what inspires us as we tell our own story with the flavors and spirits of the Midwest.

There are ninety-nine different ways to write “sushi” in the Japanese script of kanji. Each with its own unique interpretation and meaning. It was with great deliberation that our founder, Billy, chose 寿司 to best represent his personal interpretation of the word - Celebration of Fish! That’s exactly how Billy feels about the art of making sushi and the atmosphere that surrounds it - it should be a celebration! Which is why Billy Sushi is more than just a restaurant, it is an experience for anyone who allows themselves to take part. A three-ring performance of sorts - sushi bar, sake bar and dining room - brought to life by the performances of sushi chefs, bartenders and servers. And the Ring Master and your host, Billy.

Hopkins is a great place for good food and drink. We enjoyed our happy hour drinks and app specials. The half wedge was large enough for 2 and very good, although a bit salty. The baked white fish special was excellent. I would advise against ordering the Bol du Nord. Its listed as fried walleye with a mushroom cream sauce, spinach and wild rice medley. I expected the walleye on a plate with a cream sauce, side of sauteed spinach and wild rice medley. What was delivered was a bowl of rice with a few spinach leaves and about 1.5 cups of cream just poured over it. It was thin rice soup with the fried fish stuck in it. Way too much cream. Either the cook is unfamiliar with a cream sauce or he ran out of time.
