El plato más reconocido del Y.O. Ranch Steakhouse es el filete de res de primera calidad de Texas, pero los comensales tampoco se pueden perder la gran selección de carnes de caza, todas ellas procedentes de animales criados en libertad en un rancho de 48,000 acres cercano a Kerrville, Texas. Además, el YO sirve carne de venado, alce, jabalí, aves de caza y el plato estrella, el filet mignon de búfalo. La mayor parte de la carne de res del Y.O. es Angus negro de Texas cortado a mano en el establecimiento según un método muy similar al de los trabajadores del rancho, que son fieles al mismo desde hace más de 125 años.
