food was very average for the price. Unimaginative! Abundant amounts of salt should not be a substitute for fine spices. My scallops were overcooked and dry.
Took a friend who had never enjoyed the lovely setting of this long time resort nestled among the boulders at Carefree. Sat on the patio overlooking a grassy area and pond. The waitress and hostess could not have been more welcoming and gracious. We both had the Southwest Chopped salad that had roasted corn, avocado, tomatoes, and other yummies with an interesting dressing to cause us to say hmmmmmm, this is really good. It is a seasonal thing to enjoy lunch at the Palo Verde restaurant because they stop around June. The great thing about living here is to enjoy what I call the mini vacation you can experience for a couple of hours at these casual luxury resorts. So glad to share this again....it had been a while. A real treat.
We were very cold in the dining-room and had to eventually ask that both doors be closed. The ambiance was rather cold as well. The 4 of us have lived in Europe for many years and have eaten in some very fine Swiss and French restaurants. I personally enjoyed my meal - have nothing negative to say about it, however, from what I understand, our friend, who picked up the tab would give it a 6.5 out of 10 based on price performance.

The ambiance and service were disappointing. For a Saturday night, the restaurant in general and the outdoor patio in particular were very quiet and lacking in any kind of atmosphere. Our server seemed nervous and brought us the wrong bill, after which we did not see her for about 15 minutes so we had to wait to get the bill corrected. On the positive side, I would recommend this restaurant based on quality of food (which was very good) and location (if you are staying at the Boulders).
Not Worth the Cost
We were greatly anticipating a lovely dinner after a long day of travel. We read the write up online and perhaps our expectations were too high based in the eloquent descriptions. We found it to be rather 'flat' in terms of food and ambiance. Our server was extremely knowledgeable and enthusiastic, but seemed harried in a rather empty looking restaurant. Perhaps her tables weren't strategically organized. Nonetheless, we enjoyed our dinner, but wouldn't recommend or return. There are too many choices in the surrounding towns. My assessment: captive audience equals the ability to be able to sustain a good but not great dining experience.
Went for a birthday brunch on a Sunday with reservations. Got seated immediately on the patio but no server(the server assigned had not been told we had arrived by the hostess). When we asked the hostess about a server she immediately apologized and we were then served immediately. Our server was helpful and knowledgeable. the food was delicious the ambience very nice and the view outstanding. There was some residual carryover noise from some spring breakers at the pool but not enough to annoy. In all would highly recommend againd.
The only thing that was tasty was the bread and spreads that came with it. The menu is very limited so I ordered the special, tuna. Our waitress made no mention of the price of the special which absolutely shocked us when we received the bill - $80. The way the space is shaped, sound really travels, so you could hear every word the servers said even if they were on the opposite side of the restaurant. We really liked the resort itself, but there were no quality dining options. Of the three restaurants, Palo Verde is the worst.
Went to the Boulders expecting fabulous food and fabulous atmosphere. The food was good although my husband hated the soup. My disappointment was that it was so un festive. We sat while it was still light and enjoyed the scenic vista, but when it became dark, there were no lights in the distance, no music, just sitting on the quiet patio. Inside was a cavernous room that was loud and resplendent with echoes. The decor --there was none. Glad we sat on the patio. As they say, nothing to write home about. The waiter was terrific and very helpful to us with the menu.
The resort appeared empty and the restaurant and lounge was dead. For peak season it looks like the Boulders is struggling. The menu and food was average which is disappointing given the Boulders past reputation.

Terrible experience at Palo Verde
While we understand that the resort is evolving certainly based on our recent experience this can not be the standard that they want to achieve. The noise level even though the dining room was less then half full was deafening. The room stark and with zero ambience. The service was slow we waited over 15 minutes for a drink. The food was ok at best but the portion size for the price paid was unacceptable. We are not by any means an isolated case as we observed other people being unhappy with their experience, from walking out, to sending food back. Our server dropped our check on the table with out ever asking if we wanted dessert or coffee. The management has alot of work to do here should they ever want any return business at this hotel restaurant. There are so many better options close by to the hotel.
Unless you are starving...
The newly renovated morgue-like Palo Verde serves food drowned in heavy cream. Avoid at all costs (and those will be high!) One star is very generous for this faceless, tasteless place!
We expected more
We felt the menu was very limited, although the food was good. The wine list was what you would expect at a chain restaurant--very disappointing for a resort. Although our wait person was attentive, we felt rushed.
Great experience close to home
This was our first time dining at Palo Verde Restaurant and we will definitely return. The warm crispy rolls and butter that arrived first were so good, we had another basket. The Appetizers ( crab cake and red chili shrimp) were wonderful. My husband had the Scallops which he really liked and I had the Flank Steak. My portion was so big, that I took half home. Enough for Lunch the next day. The service was attentive and the manager welcoming.
Small menu, but quality food
Great restaurant in Boulders Resort. Dining room appears to be a bit dated, but sitting outside was great. Nice view of boulders and golf course. The menu is not very big, but the food was excellent. The kale salad was one of the best I've had. Entrees were moderately portioned, but very good.
Palo Verde at the Boulders
I had dinner last weekend at Palo Verde. The view is quite beautiful, sitting on the patio. The service is excellent. I did have to send my filet back as it was overcooked, but they brought another one that was perfectly medium-rare and delicious. It was accompanied by foraged mushrooms and fingerling potatoes in their special Palo Verde sauce. I enjoyed the sparkling wine, Chandon Brut, which is from the area I live in. The crab cake was full of lump crab, and almost no "cake". The chipotle sauce on it was very good.

We were delightfully surprised at this great restaurant tucked back off the noise and chaos of Phoenix. My husband surprised me with dinner there for our anniversary. We were highly satisfied with all aspects of our visit from the moment we walked out of our car until we were assisted back into it by the valet. Great food excellent service and a wonderful peaceful atmosphere. Not to mention the breathtaking views. My thanks to the waiter and the lovely manager that ensured we had an excellent night. Can't wait to return.
We have dined at Palo Verde twice in the past two weeks and must say the food was great! While the menu is small most noteworthy are the crab cakes that are loaded with crab and not filler. Meats cooked perfectly to order, delicious Ranchers salad and warm crusty bread. Service was swift and attentive. Its a lovely restaurant in a high end resort which I wish they would enforce some basic dress code. While I know most travelers do not want to get dressed up, cargo shorts and flip flops are unacceptable.
Palo Verde - Southwest Breakfast Old School
The Palo Verde Restaurant is in the Boulders Resort in Carefree, Arizona. It is one of the main dining rooms. I went there for breakfast with 4 colleagues while they were staying there for a business function. Make no mistake, the food is good. But I think it's a bit "Southwestern Dated". It may be because I live in the area but the menu reads like any one of a 100 menus from 80's. Visitors will probably be happy, locals may think it's a throw-back. I had the Pork Green Chile Breakfast Enchiladas special which was tasty. The others were satisfied with the Breakfast Burrito, Sonoran Eggs Benedict and Huevos Rancheros. Sides of Fruit, Pastries , Bacon and Sausage were good too. The service was attentive and nice. Price points were a little high but for a resort environment, fairly reasonable I think. All-in-all, an OK experience for me and a good one for my guests.
My new neighborhood favorite.
We live in (far) North Scottsdale and are always looking for good neighborhood dining choices. We frequented the restaurants at The Boulders Resort in years past but moved on. We're back! We've dined at Palo Verde and The Grill several times and on each visit, every member of our parties expressed satisfaction with the food, service, beverages and ambience. The e manager at Palo Verde is very attentive and assures a great time is had by all. And it's only five miles from home which is a real benefit.

This restaurant needs a huge renovation, as well as the staff. Even though we were one of three tables in the entire restaurant (on a Saturday), the service was not good...!!!
For a Waldorf Astoria resort, we had greater expectations of dinner here. The restaurant is well appointed, service was very good, nice ambiance, but food was just in the 'fair' category. I had the bison short rib which was a bit tough and chewy, and not as flavorful as I would have expected. Overall a disappointing meal.

All our food was very disappointing. French Fries and Sweet Potato Fries looked like they had been cooked the day before. Food was highly overpriced for what we got, desert were very poor and highly overpriced. We were sorry about the food. Service was good.
There for Christmas Brunch. Entrance, valet, and host staff were right on their game. Wheels fell off the service cart in the dining room. We ordered the "bottomless" mimosas. They must have been bottomless because they were always empty. Server would walk by the table, look at the empty glass, and keep walking. When we got the bill they had one of the entres wrong. We pointed it out and were told my wife ordered a new item on the menu and they did not know how to enter that in the computer, so they charged us for something similar. Palo Verde has the potential to be a great place. Much of the hard work has been done well. But they need some serious training in the dining room. If they can get this fixed it could be a world class resort.

Nice arrival and easy valet parking- Poor food - Chef unable to manage a pepper sauce for my wife's fillet steak. Steak undercooked and poor presentation. Will NOT re-visit nor recommend.

My husband and I went to The Boulders for a stay-cation for his birthday. We had reservations at the Palo Verde Room for dinner. We started with signature cocktails that were great. Then ordered a crab cake appetizer yummy! I ordered the scallops and my husband the rib-eye and we shared each, scallops were awesome, excellent flavors with the different sauces, rib eye was prepared perfectly, but my husband was still trying to get another one of my scallops :-) Portion size perfect, not over stuffed. We split flourless chocolate cake for dessert and wished we had tried something else. Overall, the food was wonderful, service great and it was a nice quiet romantic atmosphere.
Good, not great
This restaurant is back on their winter menu which is a substantial improvement on the summer menu. Oddly enough they are closed on Tuesdays and Wednesdays which is a bit strange for a restaurant in a high end resort. Bison is back and is pretty good. I can recommend it. If it is warm out, they have outside patio seating overlooking the golf course. The service is outstanding (Brian) The chef has been very accommodating in the past so I assume he will still allow modifications to suit your tastes. The black bean soup with lime is a real treat if you like black bean soup and it is good enough to make you a fan of it even if you don't. Nice quiet place for dinner with friends in Carefree.
Good Food and Execution
The menu is small, but interesting. The food tastes fresh and the preparation is well executed.
The menu has been updated and it offers uncomplicated, well-prepared choices. I had the lamp chops served with mashed sweet potatoes and kale. The dish was sensational. My husband had halibut and he raved about the freshness and preparation. The food at this restaurant used to be good and it is now great, as is the service and atmosphere.
We Thought It Would be Better
Hadn't been here for 20-years. Had a very difficult time locating after dark for our evening reservation. Got the table closest to the kitchen entry and congregation point for wait-staff. Our guest did not enjoy the 'prickly pear margarita'. Husband's halibut was very good. My shrimp w/ egg-noodles was OK, but noodles were stiff and hard, and cold. The lamb chop presentation was very nice; but our guest could not cut them with the serrated knife, and had to ask for a sharper knife. Then, my husband ended up cutting them for her! Had to ask for mint sauce to accompany the lamb chops. Bread was hot and fresh. And the creme brule was excellent. Really, we don't think this venue is really all it's hyped up to be.
Great Food great Service
Went on Restaurant week since we have never been there and it was close to home. We were greatly surprise on great the food and service was. We will be back for sure. Great staff to help you out in every way
We have been to Palo Verde several times over the past two years. In the past we gave it 4 stars but only managed 3 stars this time. We were with another couple who were satisfied, however, the dish with short ribs had the vegetables overcooked while one dish with sea bass had the vegetables undercooked. We will go back as the atmosphere & service is very good and expect the food overall to be at least a 4 star next time.
