While the restaurant setting is beautiful and the food was good, our service while pleasant was very slow. Waitress appeared uninterested and had to be located twice. Other waiters would not step in but went to find her. She was patience with an elderly customer. We would try Cobalt again though I felt the overall experience was not as nice as our previous visits.

We had a very enjoyable experience at Cobalt.Richard was our waiter and all 4 of us thought he did an exceptional job.We went outside after a wonderful dinner and sat around the fire pit. After about 15 minutes Richard came out by us and refilled our coffee and asked us if we needed anything else.Very Professional! Because of our enjoyable evening we will definitely return.

The menu was limited, but the selections we chose were excellent. My wife had the sea bass and I had the wahoo and both were delicious. The waiter was very nice and very attentive. Free valet parking was a nice touch.The view of the ocean was beautiful. We left stuffed and we plan to return and next time we'll save room for the crème brulee.

Cobalt Restaurant at Vero Beach Hotel and Spa
My wife and I recently had cocktails and dinner at Cobalt Restaurant. We were accompanied by two guests of ours. We have dined there before and had generally pleasant experiences. This time was quite different. The valet refused to park our car because we were not "registered guests at the Hotel". Our server was very courteous but we waited over an hour for our meals after we had placed our order. When the meals were served 2 entrees were somewhat cold. We were embarrassed because we had guests and we do not plan to return to Cobalt again any time soon.
Cobalt is always our first choice when entertaining guests. The hostess and wait staff are friendly and professional. The lunch menu offers just enough of a selection for everyone, and no one has ever been disappointed. The truffle fries are amazing!! This is the place to go for a relaxing meal on the beach. We are also returning again this week for Happy Hour with some friends.....great apps and cocktails!!

Had drinks on the patio with friends with a beautiful view of the beach. Service was just great. Moved inside for dinner and the experience was just as good. It is a very pretty room with good service and excellent food.
We ate outside so the view and noise level were perfect - the hostess was terrific and helped us get our group of 10 together. Our order was taken quickly but that was where the good service ended - it took forever, one order was wrong and sat on the table forever and only 3 people at a time were served. I have heard for sometime that the service was bad and can not attest to it. I don't know if it was the kitchen or wait staff - I suspect a little of both.
Since the Vero Beach Kimpton was opened, annually, we have brought a group of friends to lunch at Cobalt. The first few years were outstanding and we couldn't wait to come again. Last year was "just OK' with rather poor service and we were kept waiting when we had a firm reservation and were not been seated outside as requested when the reservation was phoned in. However, we decided to try once more, this time through Open Table. With one person on a cane, we were again, with a firm reservation through Open Table, kept waiting and it took over 1/2 hour after that to get our order in; our waiter paid little or no attention to us the entire time (the excuse were were givens that he was working a "party") and one order had to be sent back. Never again. Good-bye Kimpton.
Best new find in Vero
Can't believe we haven't been here before. Our family had been in Vero for many years and go to the same restaurants over and over and we can't convince the "powers that be" to try something new, but I'm so glad we tried Cobalt! Not like anything in the area. More in tune with big city dining. Based on our experience you won't be disappointed.

Service was lacking
Our entrees and appetizers were all brought out at the same time, which was awkward because each person in our group ordered a salad and main plate. Additionally, we ordered the calamari, which was completely forgotten along with the charge for the wine on our bill. The waiter realized both mistakes, but overall our experience was just OK.
Over priced & over rated
The service was ok, not spectacular or even attentive. The meal was drastically over priced. The food was average. The menu was extremely limited. Although I live down the street and have eaten there before, I will not again.
What a mistake
It was my Mother's 85th birthday and she wanted to go to Cobalt. What a mistake. the menu was limited, no specials, because according to the server, "we have a new chef and he wants to work out the kinks". My 85 year old mother (who hardly ever drinks) wanted a mudslide. The server said she would have to get it from the pool area. when she returned, 20 minutes later, she served it to her in a plastic disposable cup. 3 of the 4 dinners we ordered weer inedible. we also ordered the Lobster Mac 'n cheeses and the fried green tomatoes "for the table" as it was stated on the menu. the mac 'n cheese was SO dry that when you put a spoon in it to serve, it crumbled out of the bowl and all over the table. There were 2 fried green tomatoes on the dish. 2. 2 tomatoes. for 4 people. the presentation of the plates was sloppy and disgusting. the total bill for 4 people (6 glasses of wine total) was $336.00 Never again.

Beautiful outdoor scene looking at ocean. Our waiter was very nice and friendly but seemed to forget condiments, water, then dessert menu. I went for the fried green tomato BLT, (I know, crazy huh?), and the tomatoes were too thick and hard and the sandwich had no flavor. I will try something like the lobster roll next time, which looked really yummy! I will definitely go back, even if for the view alone!
With not an over abundance of great restaurants in Vero Beach this was a great find. The wait staff was attentive and pleasant to interact with. The fresh oysters were very good, however the tomato foam topping would be better to simply not be added. The horseradish was fresh and had lots of kick. The fresh fish was great and made the entire evening excellent. Well worth the visit and planning another visit in a couple of nights.

Visiting family in Vero and wanted to take them to a 5 star restaurant. Found Cobalt on line and it was fabulous. Expect to spend a lot but it's worth it. Cocktails & appetizers outside on the beach terrace was super special. Would love to live closer to be able to go again.

Lunch with friends
We chose Cobalt to treat our friends visiting from out of state to lunch to celebrate their birthdays. We requested window seating since it was too cool to eat on the patio. We got a seat by the door to the patio where there was constant traffic out and in [as fellow dinners realized the patio was a bad choice]. As a result, we were subjected to a constant cold breeze. Our friends ordered the lobster roll only to be told they were out [after a bit of a delay] and to choose something else. I ordered the Cobalt omelet and received the veggie omelet [which I didn't realize until my search for expected shrimp proved futile, as was resistance]. I would try to find somewhere else next time.
Ambience can't be beat
The atmosphere could not be beat. If you sit outside you are literally almost right on the water. They also had a fire pit out there where you could have drinks. The food was very good. It was pricey though. Similar prices to Ocean Grill. However, Ocean Grill does not take reservations and this place does. Thanks to Open table very easily done. It was recommended at the hotel.The service was a little slow. I think they might have been short a waitress because our waitress was really hustling. A nice experience for our last night.
GREAT FOR SPECIAL OCCASION
Everyone in our group thought the food was outstanding. Right on the beach, the views and the decor are just beautiful. The service was great, and they do not rush you. Will go again.
Great way to kick off celebrating our anniversary
Had a great lunch with awesome friendly service. The whole experience was relaxing and enjoyable. Perfect for a start of the day and heading to a play for the afternoon.
We have been coming to the restaurant for years and this was a very disappointing experience for all of us. All six members of our party's food was poorly prepared and tasteless, some overcooked and the rest undercooked. The "signature disk", scallops was almost uneatable. In fact we didn't finished it! The service was also very slow. Although we were at the far end of the restaurant the noise from the bar was unbelievable. As a matter of fact, when we left we could here the loud music/noise all over the hotel. We believe that the management will have to make significant changes very quickly or risk loosing a significant number of its loyal customers. Several other of our friends have also experienced similar disappointing experiences recently.
Spouse had conch chowder and really liked it. I had the tomato and burratta salad which was very good. He had the braised short rib while I enjoyed the snapper. Not as crazy about the rice that came with mine. Dessert was the chocolate tart which was really good Our lady server was very good which made for a wonderful evening.

Best french fries ever! The only bad thing I (and my friend) both said was that the seats are too low for the indoor tables. I'm not short (5'6") so I don't usually have that problem. Also, we had a 1:45 reservation for lunch and they were already sold out of a lot of dishes. Disappointing!
Things are finally getting better
With its ocean-front setting, al fresco dining (weather permitting) and attractive interior design Cobalt has the potential to be one of the best restaurants in Vero Beach (unfortunately this is not a very high standard). However in years past the only thing Cobalt did consistently was disappoint. Poor food, amateurish service. So, every season we return in the hope that things will have gotten better. And this year we are finally seeing light at the end of the tunnel. My "brick chicken" was moist and tender although the skin was not crisp and the meat was under seasoned. The chicken breast sat on a bed of uber silky mashed potatoes. My wife's short ribs were very good and our guests' snapper specials were tasty and properly cooked, if not memorable. Good service -- that is to say the lack of it -- has been a major irritant in years past. This time our waiter was congenial and efficient but, still, with an inadequate knowledge of how the food was prepared and the composition of ingredients. Really, there's no excuse for this in a restaurant that aspires to be a fine dining establishment (I contrast this to the superbly trained crew at Vero's Amalfi Grille); management needs to do a much better job here honing the professionalism of its wait staff. That said, we will go back to see if the improvement continues. And I have not been able to say that for a long, long time.
Florida visitor looking for a special night out
The restaurant is stunning with great acoustics. The portions were small. We knew it was going to be pricey. My food was cold, and they could not have been nicer about taking it back. But round 2 was cold as well, so I gave up and nibbled at it. A great bar scene with fabulous music!
A quality dining experience
We enjoyed a very pleasant lunch overlooking the Atlantic. The food was well prepared and priced attractively. We were treated to a complimentary order of truffle fries which everyone enjoyed.
